Dr. Teerarat Itthisoponkul is Assistant Professor at the Faculty of Agricultural Products Innovation and Technology at Srinakharinwirot University. She graduated with a Ph.D. in Food Sciences from the University of Nottingham, United Kingdom. As an expert in agriculture and food innovation, she published her research on The Food Chemistry Starch Technology Encapsulation Functional Food. Other researches include the use of purple corn as agricultural waste to produce a mixture of healthy food, the development of a healthy diet from fruits, the use of sustainable technologies for processing banana grade vacuum into syrup, the development process of virgin coconut oil and other food products used as components for promoting healthy food.
